Avocado Egg Salad Sandwich

- 1 hard boiled egg
- ¼ ripe avocado
- 1 tbsp plain nonfat Greek yogurt
- 2 tbsp green onion, chopped
- 1 tsp Sir Kensingtons spicy brown mustard
- Red pepper flakes
- Ground pepper
- Thinly sliced cucumber
- Pumpkin seeds
- Mix all ingredients together in a bowl
- Layer piece of whole grain toast with spinach, cucumber, avocado egg salad, microgreens and pumpkin seeds
