Avocado Egg Salad Sandwich

  • 1 hard boiled egg
  • ¼ ripe avocado
  • 1 tbsp plain nonfat Greek yogurt
  • 2 tbsp green onion, chopped
  • 1 tsp Sir Kensingtons spicy brown mustard
  • Red pepper flakes
  • Ground pepper
  • Spinach
  • Thinly sliced cucumber
  • Pumpkin seeds
  • Microgreens
  1. Mix all ingredients together in a bowl
  2. Layer piece of whole grain toast with spinach, cucumber, avocado egg salad, microgreens and pumpkin seeds
