Cashew Chia Pudding

Serves: 3 cups
  • 1 cup raw cashews
  • 2 cups filtered water
  • 2-3 tbsp maple syrup
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • ⅓ cup chia seeds
  1. Soak cashews in warm water for 4 hours, then drain.
  2. Add to high-powered blender with filtered water, maple syrup and vanilla to blend on high until smooth. Once done, add chia seeds and pulse once more to combine.
  3. Pour into jars or small tupperware and store in refrigerator.
  4. When ready to eat, add toppings such as heated berries, diced apple, banana, coconut flakes, oats (breakfast idea), chocolate chips, nuts, etc.
