Cashew Chia Pudding

Serves: 3 cups
- 1 cup raw cashews
- 2 cups filtered water
- 2-3 tbsp maple syrup
- 2 tsp vanilla extract
- 1 tsp cinnamon
- ⅓ cup chia seeds
- Soak cashews in warm water for 4 hours, then drain.
- Add to high-powered blender with filtered water, maple syrup and vanilla to blend on high until smooth. Once done, add chia seeds and pulse once more to combine.
- Pour into jars or small tupperware and store in refrigerator.
- When ready to eat, add toppings such as heated berries, diced apple, banana, coconut flakes, oats (breakfast idea), chocolate chips, nuts, etc.
