Cilantro Honey & Garlic Grilled Salmon and Quinoa Veggie Bowl

  • Salmon Glaze
    1 cup cilantro, finely chopped
    1/2 tbsp honey, melted
    2 tsp minced garlic
    1 tsp apple cider vinegar
    1 tbsp lemon or lime juice
    1 tbsp olive oil
    1/4 tsp ground pepper
  • Grilled Vegetables
    2 tbsp avocado oil
    1 tsp Primal Palate Adobo Seasoning
    1 medium yellow zucchini, sliced
    1 medium green zucchini, sliced
  • Bowl Ingredients
    2 salmon fillets
    2 cups mixed greens
    1 cup steamed green beans
    1 cup cooked quinoa
  1. Salmon Glaze: whisk together all ingredients and brush glaze onto thawed salmon fillets to marinate in the fridge 15 minutes before grilling
  2. Grilled Veggies: add sliced zucchini to gallon ziplock bag, along with oil and seasoning. Shake and let marinate in the fridge for about 15 minutes before grilling
  3. Once salmon and veggies are done grilling, add to bowl with mixed greens, cooked quinoa, steamed green beans and cilantro avocado sauce (optional)
