  • 1 large apple
  • 2 tbsp coconut flakes
  • ¼ cup chopped pecans
  • ¼ cup granola (I used One Degree Organics Cinnamon Flax)
  • 2 tbsp ground flaxseeds
  • ½ tbsp melted coconut oil
  • ¼ tsp ground ginger
  • 1 tsp cinnamon
  • 1 tbsp honey
  1. Slice the apple in half and spoon out the middle of each
  2. In a small bowl, mix together all ingredients, excluding honey
  3. Spray a baking pan or dish with coconut oil and place the apple halves skin down
  4. Fill apple with mixture and drizzle honey over the top
  5. Bake at 350 degrees F for 20-25 minutes
