Coconut Peach Overnight Oats

  • ¼ cup steel cut oats
  • 1 serving vanilla protein
  • 2 tbsp chia seeds
  • ½ tsp cinnamon
  • ½ cup fresh or frozen riced cauliflower
  • 1 tbsp Essentially Coconut Original Coconut Butter
  • 2 tbsp shredded coconut
  • 1 medium peach
  • ¾ cup unsweetened almond milk
  • 2 tbsp granola
  1. Cook oats according to package on stove in water
  2. When done, add in almond milk, protein, chia seeds, cauliflower, shredded coconut, melted coconut butter, cinnamon and ½ diced peach
  3. Stir and let cook another 2-3 minutes
  4. Store overnight in jar in the fridge
  5. In the morning top with more almond milk, ½ sliced peach, coco drizzle and granola
