Grilled Corn and Roasted Cauliflower Summer Salad

I love this concoction I randomly came up with the other day. It can double as a salad or a dip with crackers or tortilla chips. Super flavorful and satisfying
  • Roasted Cauliflower
    1/2 medium head cauliflower, chopped into florets
    1 tbsp avocado oil
    1 tsp garlic powder
    2 tsp nutritional yeast
    1/4 tsp ground pepper
  • Grilled Corn
    1/4 tsp avocado
    1/4 olive oil
  • Salad
    1/4 medium red onion, sliced
    1 cup grape tomatoes, halved
    1/2 cup garbanzo beans
    1/4 tsp ground pepper
    1/4 tsp garlic powder
    1 tbsp organic hemp oil
    3 tbsp crumbled goat cheese
    3 tbsp green onion, chopped
  1. Spray cauliflower florets with avocado oil, season with garlic powder, nutritional yeast and ground pepper
  2. Broil in the oven for about 15 minutes, flipping around 10 minutes
  3. To grill corn, brush corn cob with avocado or olive oil and season with garlic powder and ground pepper
  4. Place on the grill for about 10-15 minutes, rotating every 5 minutes, or so
  5. Once done, toss with red onion, grape tomatoes, garbanzo beans, ground pepper, garlic powder, organic hemp oil, crumbled goat cheese and green onion
  6. Pair with crackers or chips of choice

    Sounds yummy, but how do you prepare the corn? Looks like its missing from the recipe. ๐Ÿ™‚

      Oh no, I will add it now! It was leftover in the fridge, so I forgot to add it ๐Ÿ˜‰ All I did was spray the corn on the cob with avocado oil and season with garlic powder and ground pepper before I grilled it.
