One of my favorite snacks to have prepped each week is energy balls/bites. They’re so quick and easy to make, not to mention the perfect on the go treat. Basically, I just throw ingredients into a food processor and let it do it’s thing, roll into balls, store in the fridge, and have a few throughout the day.
For this recipe below, I used Paleo Passion Foods Maple Cinnamon grainless granola as part of the base and I can’t explain how delicious they came out!!
Go try them out for yourself! They only take about 10 minutes.
Maple Spice Energy Bites
- 1 1/4 cup granola (I like Paleo Passion Foods Maple Cinnamon grainless granola)
- 1/4 cup cashews
- 1/4 cup almonds
- 1/3 cup shredded coconut
- 2 tbsp cacao nibs
- 2 scoops collagen peptides (or a scoop of protein powder)
- 1/3 cup almond butter
- 2 tbsp hemp seeds
- 1 tbsp chia seeds
- 3 tbsp unsweetened almond milk
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1/2 tsp pumpkin pie spice (optional)
Combine almonds and cashews into food processor or blender and pulse for 30 seconds.
Add remaining ingredients and pulse until smooth. Form mixture into small, 1-inch balls.
Refrigerate for up to one week (for best taste), or store in freezer to last several weeks.
