Pasta Salad With Grilled Chicken And Veggies

  • Chicken
  • 2 organic chicken breasts
  • 2 tbsp olive oil
  • ½ tbsp Primal Palate Adobo seasoning
  • ½ tsp garlic powder
  • ½ lime, squeezed
  • Veggies
  • 1 medium zucchini
  • 1 medium yellow squash
  • ½ tbsp avocado oil
  • ¼ tsp garlic powder
  • ¼ tsp Primal Palate BBQ Rub
  • Salad
  • ½ cup kidney beans, drained and rinsed
  • ½ cup pinto beans, drained and rinsed
  • 1 cup cooked chickpea shell pasta
  • 1 cup fresh spinach, chopped
  • 1 cup cherry tomatoes, halved
  • ¼ cup crumbled goat cheese
  • ¼ tsp ground pepper
  1. Chicken
    Marinate organic chicken breasts in olive oil, Primal Palate Adobo seasoning, garlic powder and lime juice for 5 min or longer
    Place on a hot grill, cook about 5 minutes then rotate chicken breast 90 degrees for criss-cross grill marks
    Cook another 2-3 minutes then flip to finish cooking, about 5-8 minutes, depending on how thick breasts are
  2. Vegetables
    Cut zucchini and yellow squash in longer ½-inch thick slices and toss with avocado oil, season with garlic powder and BBQ rub
    Grill for about 3-5 minutes on either side
    Once done, chop up veggies into bite-size pieces
  3. Salad
    Toss sliced chicken breast and veggies with kidney and pinto beans, chickpea shell pasta, chopped spinach, cherry tomatoes, crumbled goat cheese and season with ground pepper
