(Premade) Cauliflower Crust Pizza With Vegan Cashew Pesto

  • 1 Cali'flour foods cauliflower pizza crust
  • ½ zucchini, thinly sliced
  • 1 roma tomato, sliced
  • 3 mushrooms, sliced
  • 2 artichokes
  • 2 tbsp green onion, chopped
  • 2 oz. goat cheese
  • Vegan Cashew Pesto:
    1/4 cup olive oil
    2 cups fresh basil
    3 tbsp nutritional yeast
    1 tbsp minced garlic
    1/3 cup raw cashews (or pine nuts)
    1 squeezed lemon
    2 tbsp filtered water
    1/4 tsp sea salt
    14 tsp pepper
  1. Preheat oven to 375 degrees F. Place Cali'fornia pizza crust on a parchment paper covered baking sheet and bake for 8-12 minutes.
  2. Prepare cashew pesto by pulsing all ingredients in a food processor or blender until desired consistency.
  3. Remove pizza crust from oven, spread with pesto and add toppings of choice and put back in the oven for 10 minutes.
