Raspberry Coconut Overnight Oats

  • 2 tbsp steel cut oats
  • 2 tbsp buckwheat
  • ¾ cup riced cauliflower
  • 1 tbsp Essentially Coconut Original Coconut Butter
  • 1 serving vanilla protein
  • 2 tbsp chia seeds
  • ½ tsp cinnamon
  • ¾ cup unsweetened almond milk
  • 2 tbsp shredded coconut
  • ½ cup frozen raspberries
  1. Cook oats and buckwheat according to package in water over the stove
  2. When about being done, add riced cauliflower (for added veggies without the taste) to cook another 2 minutes
  3. Next, add rest of ingredients and stir
  4. Let cool and add to jar to store overnight in the fridge
