Savory Breakfast With Sweet Potato, Eggs, Veggies and A Tortilla

- ½ small organic purple sweet potato
- 1 cup broccoli
- 2 tbsp red onion, chopped
- 1 tbsp avocado oil
- ¼ tsp ground pepper
- 2 pasture-raised eggs
- 1-2 tbsp crumbled goat cheese
- 1 Siete Foods almond flour tortilla
- Sauté sliced sweet potato, broccoli and red onion in avocado oil and ground pepper
- Pan fry eggs until desired yolk consistency
- Heat tortilla over burner flame for about 30 sec either side
- Top veggies with crumbled goat cheese
