Tuna Salad Sweet Potato Toasts With Roasted Cauliflower

Regular toast?? No, you guys have to try this new revolution-- Sweet potato toast. Packed with vitamin C, vitamin A, potassium and many more nutrients, you can't go wrong with this food vessel.
Ingredients
  • Safe Catch Foods albacore tuna
  • 1 small dill pickle, diced
  • 2 tbsp plain Greek yogurt
  • ¼ tsp dill weed
  • ¼ tsp ground pepper
  • ⅛ tsp red pepper flakes
  • ⅛ tsp garlic powder
  • ⅛ tsp Trader Joeโ€™s 21 Seasoning Salute
  • ½ lemon, juiced
  • 1 medium sweet potato
  • Roasted Cauliflower
    1 head cauliflower
    1/2 tsp garlic powder
    1 tsp turmeric
    1 tbsp avocado oil
Instructions
  1. Mix all ingredients for tuna salad together
  2. Slice sweet potato in half, length-wise
  3. Then cut about ¼ inch slices from both halves
  4. Toast for about 5-7 minutes (you may have to put the toast down 3-4 different times in the toaster until it starts to brown)
  5. Top sweet potato with arugula and tuna salad
  6. To prepare roasted cauliflower, lay florets on baking sheet and toss with avocado oil, garlic powder and turmeric
  7. Broil in the oven on high, middle rack for 12-15 minutes, flipping towards the end
