my kind of heaven on earth 🫰 Sharing the flauta

my kind of heaven on earth 🫰 Sharing the flautas I made for cinco de Mayo / my mom’s birthday last week 🥰 used the OG recipe from @shutthekaleup but added in @sietefoods new refried beans and my shredded chicken verde, wow 🙌😮‍💨 make sure to like and save this post for later 🌟

Shredded Chicken Verde:
2 organic chicken breasts, trimmed/tenderized and halved
2 tbsp avocado oil
1 jar salsa verde (I use Trader Joe's)
Flautas:
@sietefoods grain-free tortillas (I like the coconut + cassava best)
@sietefoods refried beans
3-4 tbsp avocado oil
Directions: In a medium pot, heat 2 tbsp avocado oil on medium heat, then add chicken breast to brown on either side (about 2 min). Pour in entire jar of salsa verde, stir chicken, then cover with lid to let cook on medium-low heat for 10-12 minutes. Once chicken is tender, remove from heat and transfer just the chicken to a plate or cutting board. Shred with two forks (or use a stand mixer). Pour shredded chicken back into the pot.
Flautas:
Heat 3-4 tbsp avo oil in a large skillet on medium-low heat. Heat tortillas over an open flame until soft/slightly charred (or in a skillet with no oil, either side). On a flat surface or cutting board, fold in a good amount of shredded chicken + 1-2 spoonfuls refried beans, if using, and roll up tight. Gently transfer to skillet, fold-side down, to fry/brown. Flip every 3-5 minutes, or when browned/crisped. Continue for your remaining tortillas.
BUILD: add @kitehillfoods dairy-free sour cream, avocado, fresh cilantro and you’re good to go!😋

🌟 banded slides to jump squat
🌟 touchdown squats
🌟 weighted step ups (or lunges)
🌟 glute bridge

CIRCUIT 4: 30 sec on, 10 sec rest, 3 rounds
🌟 jackknives
🌟 mountain climbers (4) to bear gold
🌟 hip dips (4) to dolphin

PB SWIRL FUDGE BROWNIES 🫣🍫 you down?? I’m so proud of these ones because I made them on the spot and they turned out absolutely perfect 😏 not always the easiest when they’re gluten-free, grain-free, dairy-free and refined sugar-free 💯 but don’t worry, I did the dirty work for you 😂 add this recipe to your to-do list and lmk what you think

Ingredients:
3 eggs
1/3 cup unsweetened almond milk
1/3 cup avocado oil
1 tsp vanilla extract
1/4 cup chocolate chips, melted and cooled
1/2 cup coconut sugar
1 cup almond flour
1/2 cup paleo or gluten-free flour
1/4 cup cacao powder
1/2 tsp baking powder
Pinch sea salt
1/3 cup chocolate chips (I used @hukitchen date-sweetened chips)
1/3 cup peanut butter (@santacruzorganic)

Directions: preheat the oven to 350 degrees F. Whisk together wet ingredients, then stir in dry ingredients, saving the chocolate chips to fold in last. Pour into a parchment paper covered square dish. Add spoonfuls of peanut butter scattered on top, then use a toothpick or skewer to swirl the pb into the surface of the brownies. Bake for 18-20 minutes, then remove and let cool for 15-20 minutes before digging in. Sprinkle with sea salt and serve 🤤

I searched the Climate Pledge Friendly label on @amazon to help discover some more-sustainable options and found so many good finds— including this bathroom cleaner that comes with tablets you just throw into the water (which come in compostable packaging) and our go-to laundry pods we’ve been using since we moved in (that come in zero-waste packaging). They make it super easy to think about Earth Month every day 🙂
