
Creamy Zucchini Stuffed Grilled Mushrooms

Servings 9 small mushrooms
Ingredients
- 9 larger crimini mushrooms
- 3 tbsp red onion chopped
- 1/2 Anaheim pepper finely chopped
- 1/2 tbsp olive oil
- 1 tbsp minced garlic
- 2 tbsp cilantro finally chopped
- 1 medium green zucchini spiralized
- 3/4 medium yellow zucchini spiralized
- 2 tbsp goat cheese
- Sea salt & pepper to taste
Instructions

Spoon out center of mushrooms and add to olive oiled baking sheet to bake at 350 for 8 minutes to remove most of the moisture

Next, sauté red onion, Anaheim pepper, & garlic in olive oil for about 5 minutes

Chop the spiralized zucchini into large chunks & add to mixing bowl with rest of ingredients

Add in sautéed mixture (the goat cheese will melt as you toss)

Stuff mixture into each mushroom

Place on oiled veggie grill pan and grill for about 10-15 minutes
What if you don’t have a veggie grill pan?
If the mushrooms are big enough, I’ll just place them straight on the grill!
