Creamy sesame chicken skewers 😍 with grilled broccolini and steamed rice on the side 🌳🍚 catch me making this on the grill all summer long!!

Marinade: @getsidedish creamy sesame dressing, splash of avocado oil, 1/2 lime squeezed, sea salt. Add to a bowl with trimmed and cubed organic chicken breast. Toss and let sit for 10-15 minutes. Add to skewers (let soak in water, prior, for 30 minutes to prevent from burning on the grill). Cook at about 600 degrees F covered for 4-5 minutes, flip, then an another 4-5 minutes covered. Serve with chopped green onion, lime wedges and brush on additional dressing
Trim broccolini, then toss with avocado oil and sea salt. Add to the grill halfway, then cook until slightly charred

MONGOLIAN BEEF 🌶️ you guys are going to love this one!! Tested a few times to get the flavor right and it’s perfect 🙌 tag a friend / your personal chef below to have them cook it for you 👩‍🍳

Sauce:
1/3 cup water
1/3 cup tamari (gluten-free soy sauce)
1/4 cup coconut aminos
1 tbsp sesame oil
1 tbsp rice vinegar
2 tsp freshly ground ginger
1 tbsp minced garlic (or 4 garlic cloves)
1 tbsp chili crisp (if you like medium heat. Otherwise, reduce to 1 tsp)
1 tsp sea salt

Mongolian beef:
~1.75lb pasture-raised flank steak
2 loose carrots, peeled and cut into match sticks
1 large red bell pepper, sliced thin
3-5 green onion stalks, ends removed and diagonally chopped
1/4 cup arrowroot starch
3-4 tbsp avocado oil
Sesame seeds

Directions: prep all the ingredients and whisk together all sauce ingredients. Using a serrated knife, slice the flank steak against the grain at an angle, making very thin slices (thin as possible!!). Add to a bowl with the arrowroot starch and toss until fully combined. Add 2 tbsp of oil to a large skillet on medium heat. Add the carrots and bell peppers and cover with a lid to help steam for 3-5 minutes. Once tender, remove and set aside. Add remaining 2 tbsp oil along with the beef to let cook on medium to high heat. Let cook until it browns and you barely see any pink left (trick here is to not let it overcook!!). Add the veggies back in along with the green onion and sauce. Stir, then reduce heat to medium and cover with a lid. Let cook for 4-5 minutes or until sauce has thickened. Remove from heat and add sesame seeds to serve. Pair with rice 😍

GREEK FETA FRIES 🍟 an easy skillet version that will get you hooked 😌
plus, using avocado oil is a much better option vs deep fried in canola oil 🙌

Use any yellow potato variety and cut in either sticks or wedges. Add potatoes and 3-4 tbsp of avocado oil to a large skillet and heat on medium. Let cook until golden brown (several minutes), then flip. Cover the pan to help steam. Once golden on all sides, transfer to a bowl with tongs and top with flakey @maldonsalt, freshly chopped oregano, crumbled feta and drizzle with extra virgin olive oil 🍟

Grilled honey Dijon chicken, crispy broccolini & peppers with crumbled feta and seasoned potatoes 😍 going to bringing you more grilled recipes this summer, stay tuned ✊

I made this last week and forgot to share but was thinking, what have I been doing all my life without @getsidedish honey Dijon??? The best marinade, dip & sauce for anything, I swear. Use code RACHAEL10 on their site to get their dressings (made with the best of ingredients btw. Never any seed oils)

The video says it all but essentially, trim, tenderize & let your chicken breasts sit in the marinade with fresh cracked pepper for 10-15 min. Toss your veggies + potatoes with olive oil, sea salt & whatever other seasonings you like. Then add to your preheated & greased grill (~500 degrees F), close, and let cook about 5 minutes each side for the chicken, remember to rotate your potatoes so they cook all the way through and remove veggies once they’re tender and begin to crisp on the edges. Top with crumbled feta, extra virgin olive oil, sea salt, and serve with extra honey Dijon 😍

but tbh, I’m my worst enemy when it comes to pull ups 💀 they’re so intimidating and I can’t tell you how many times I try to talk myself out of doing them or psyching myself out, saying that I physically can’t do them. Well I’m wrong 😏 I included them for a reason in my 8-week Strength Guide and I’m noticeably getting stronger every week. Starting Week 05 tomorrow, who’s with me? ❤️‍🔥

Let me tell you about these high-protein Greek meatballs and Mediterranean salad I can’t get enough of 🫰🫰 by my friend @primal_gourmet and TRUST ME that you’ll get addicted to this one!!

Meatballs:
2 tbsp avocado oil
1 pound ground lamb
1 pound lean ground beef
1 yellow onion finely chopped or coarsely grated
4 cloves garlic finely chopped
1 large egg
1 teaspoon dry oregano
1 teaspoon dry mint
1.5 teaspoon kosher salt
1/2 teaspoon freshly-cracked black pepper
2 tablespoons finely chopped fresh parsley
½ teaspoon dry red chili flakes

For the Salad:
1 head romaine lettuce thinly sliced
½ head radicchio thinly sliced
2 medium vine-ripened tomatoes thinly sliced into halfmoons
2 Persian cucumbers thinly sliced into halfmoons
1 green bell pepper julienned
½ red onion thinly sliced
2 tablespoons roughly torn fresh dill
1/2 teaspoon dry mint
¼ teaspoon dry oregano
3 tablespoons extra-virgin olive oil
1.5 tablespoons white wine vinegar
¼ cup crumbled feta cheese preferably
Kosher salt and freshly-cracked black pepper to taste

Directions: In a large mixing bowl, combine all of the salad ingredients and toss well to combine. Cover and set in the fridge until ready to serve (love mine crisp!). In a separate large bowl, combine all of the meatball ingredients. Using your hands (pro tip from @primal_gourmet, get black gloves to mix), mix together until just combined. Form into meatballs around the size of a golf ball and place on a sheet pan. Refrigerate 1-4 hours prior to cooking. 2 tablespoons of the cooking oil and place the pan over medium-high heat. Add the meatballs and cook until browned, around 5 minutes. Flip and cook until the other sides are browned and the thickest part of each meatball reaches 145F, around 5 more minutes. Transfer to a serving platter along with the fried potatoes and salad. *sharing my Greek fries recipe this week 😍🍟
