
Gluten Free Pancakes (using Simple Mills box mix)
Ingredients
Pancakes
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 3 scoops collagen peptides
- 2 tbsp ground flaxseed
- 3 tbsp unsweetened almond milk
- 3 tbsp melted coconut oil
- 1/2 box Simple Mills Pancake mix
Toppings
- 2-3 tbsp Wedderspoon Manuka honey (my favorite!)
- 1/2 cup fresh blueberries
- 1/4 cup pecans
Instructions

Whisk dry ingredients together in large mixing bowl.

Add dry ingredients and mix until thoroughly combined.

Using a 1/4 cup measure, transfer batter to coconut oil sprayed pan and cook on medium-low heat for about 2-4 minutes each side.

Once done, top with blueberries, honey and pecans.
