
Grilled BBQ Chicken, Pan Fried Potatoes & Roasted Oyster Mushrooms
Ingredients
- 2 organic chicken breasts, trimmed and tenderized
- 5 small red potatoes
- 1 lb oyster mushrooms
- 1 tbsp BBQ rub/seasoning (my favorite is Primal Palate)
- 1/2 tsp garlic powder
- 1/2 tsp salt, pepper
- 2 tbsp avocado oil

Once chicken has been trimmed of excess fat and tenderized, spray with avocado oil and season with BBQ rub. Time to grill! I used our Ninja indoor grill, but anything works.
Pan Fried Potatoes

Slice small red potatoes very thin. Add to a medium or large-sized skillet with avocado oil on medium heat. Add pink salt & pepper and cover with a lid. Let cook for about 10-12 minutes, flipping with tongs every few minutes.
Mushrooms

Preheat oven to about 410 degrees F. Spray oyster mushrooms with a good amount of avocado oil (flip and spray again), then season lightly with garlic powder + pink salt. Bake for about 30-35 minutes or until starting to crisp on the edges. Flip halfway through. *I got this recipe from my friend Jeannette of @shutthekaleup!
Serve

Add everything to a bowl with sliced avocado, flakey sea salt, green onions, & a drizzle of extra virgin olive oil. Enjoy! 🙂
