Lemon Dill Scallops Over Zoodle Pasta

  • ½ tbsp minced garlic
  • ½ tbsp Chosen Blend oil
  • 4 sliced mushrooms
  • 1-2 tbsp low sodium chicken broth
  • 4 scallops
  • ½ lemon, squeezed
  • ¼ tsp olive oil
  • 1 medium spiralized zucchini
  • ⅓ cup organic frozen peas
  1. In a skillet, sautรฉ ½ tbsp minced garlic, ½ tbsp Chosen Blend oil (or avocado/olive oil) and 4 sliced mushrooms for 5 minutes
  2. Add low sodium chicken broth for extra moisture when the oil has been absorbed
  3. Add scallops with squeezed lemon juice and dill & heat both about 3-4 minutes each side
  4. In a separate small pan, add ¼ tsp olive oil, 1 medium spiralized zucchini and ⅓ cup organic frozen peas
  5. Toss for 2-3 minutes and serve with scallops
