Mashed Red Potatoes
- 1 bag (or 15) red potatoes
- 1 cup bone broth, heated (takes the place of milk or cream, and adds a boost of nutrients!)
- 1/4 cup ghee
- 1/8 cup chives, finely chopped
- pink salt, to taste
- ground pepper, to taste
- 1/2 tsp garlic powder (optional)
Add potatoes to extra large pot, then cover with water. Lid the pot, then bring to boil. Reduce heat and let cook about 25-30 minutes, or until potatoes are fork tender.
Pour pot over colander to drain.
Transfer potatoes to large bowl and mash. I like to keep the skins on for the added color & fiber content.
Stir in bone broth, ghee, chives, salt, pepper and garlic powder, if using. Enjoy!
