
Paleo Banana Pancakes

Ingredients
- 1/2 banana
- 1/2 cup unsweetened almond milk
- 1 pasture-raised egg
- 1/2 tsp vanilla
- 3 tbsp unflavored collagen peptides or vanilla protein powder
- 1/2 tsp cinnamon
- 1/3 cup cassava flour or sub coconut flour
- 2 tbsp ground flaxseed
- 1/4 tsp baking powder
- Optional: if batter is too liquidy, add 1 tbsp coconut flour
Instructions

Combine all ingredients in a blender to blend for 1 minute.

Heat pan on medium-low then spray with coconut oil.

Drop batter (about 1/3 cup) in pan and turn the heat on low to let cook 3-4 minutes each side.
These look amazing! Quick question, Can I substitute any other flour?
Coconut flour and whole wheat flour should substitute the same. Almond flour you may need a little bit more since it’s lighter. Enjoy!

These were so good!! Probably some of the best DF/GF/Paleo I’ve had. Also insane that there is no added sugar. I added some Lilly’s dark chocolate chips to mine and they were perf. Thanks Rachael!
