Paleo Banana Pancakes

- 1/2 banana
- 1/2 cup unsweetened almond milk
- 1 pasture-raised egg
- 1/2 tsp vanilla
- 3 tbsp unflavored collagen peptides or vanilla protein powder
- 1/2 tsp cinnamon
- 1/3 cup cassava flour or sub coconut flour
- 2 tbsp ground flaxseed
- 1/4 tsp baking powder
- Optional: if batter is too liquidy, add 1 tbsp coconut flour
- Combine all ingredients in a blender to blend for 1 minute.
- Heat pan on medium-low then spray with coconut oil.
- Drop batter (about 1/3 cup) in pan and turn the heat on low to let cook 3-4 minutes each side.
