These Peanut Butter Balls are the best, no-bake, quick & easy treat to bring to all your holiday gatherings (holiday not required, though!). Nothing beats the chocolate-peanut butter combo, but you can totally customize as you wish with alternative nut or seed butters, your favorite chocolate bar, etc. Enjoy!
Whisk together peanut butter, maple syrup, coconut oil and vanilla in a medium-sized bowl.
Pour in collagen + almond flour, and stir thoroughly.
Form dough into smaller, 1-inch-thick balls and lay flat on parchment paper. Once all dough has been shaped (should make 10-12 balls), place in freezer for 10 minutes to chill/harden.
Chocolate Drizzle, To Serve and Store:
Meanwhile, melt chocolate + coconut oil, and stir. (This can be done either in a microwave-safe bowl in 30-second increments in the microwave, or on the stovetop.)
Remove balls from freezer and drizzle chocolate over the top with a spoon. Immediately sprinkle with sea salt and place back in freezer, in an airtight container, for up to about 3 weeks.
Best enjoyed when thawed for 2-3 minutes. Hope you love 'em!
