Peanut Butter Balls

These Peanut Butter Balls are the best, no-bake, quick & easy treat to bring to all your holiday gatherings (holiday not required, though!).
Nothing beats the chocolate-peanut butter combo, but you can totally customize as you wish with alternative nut or seed butters, your favorite chocolate bar, etc. Enjoy!

Ingredients

Peanut Butter Balls:

  • 1/2 cup creamy peanut butter
  • 2 tablespoons maple syrup
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • 3 tablespoons collagen optional
  • 1/2 cup + 2 tablespoons almond flour or substitute 5-6 tablespoons coconut flour

Chocolate Drizzle:

  • 1 tablespoon coconut oil
  • 1/4 of a dark chocolate bar
  • 1/4 teaspoon flakey sea salt

Instructions

Peanut Butter Balls:

  • Whisk together peanut butter, maple syrup, coconut oil and vanilla in a medium-sized bowl.
  • Pour in collagen + almond flour, and stir thoroughly.
  • Form dough into smaller, 1-inch-thick balls and lay flat on parchment paper. Once all dough has been shaped (should make 10-12 balls), place in freezer for 10 minutes to chill/harden.

Chocolate Drizzle, To Serve and Store:

  • Meanwhile, melt chocolate + coconut oil, and stir. (This can be done either in a microwave-safe bowl in 30-second increments in the microwave, or on the stovetop.)
  • Remove balls from freezer and drizzle chocolate over the top with a spoon. Immediately sprinkle with sea salt and place back in freezer, in an airtight container, for up to about 3 weeks.
  • Best enjoyed when thawed for 2-3 minutes. Hope you love 'em!
