Crockpot Stuffed Pepper Soup

Ingredients

  • 1/2 tbsp olive oil
  • 1 tbsp minced garlic
  • 1 white onion diced
  • 1 large green bell pepper diced
  • 1/2 red bell pepper diced
  • 1 lb organic ground turkey
  • 1 can diced tomatoes no salt added
  • 2 32 ounce cartons organic low sodium chicken broth
  • 1 tbsp fennel seed
  • 1/2 tbsp oregano
  • 1/2 tbsp Basil
  • 1/2 tbsp thyme
  • 1 package Trader Joe’s 10-min farro 1.5 cups uncooked farro
  • 1 tsp ground pepper
  • 1/2 tsp sea salt

Instructions

  • Cook onions, bell peppers and minced garlic in olive oil for 4-5 minutes in skillet.
  • Add ground turkey and fennel to cook until almost done, then add all ingredients to crockpot with chicken broth, tomatoes, uncooked farro and seasonings to cook for 4-6 hours.
