Cinnamon Flax Granola Baked Apples

Ingredients

  • 1 large apple
  • 2 tbsp coconut flakes
  • 1/4 cup chopped pecans
  • 1/4 cup granola I used One Degree Organics Cinnamon Flax
  • 2 tbsp ground flaxseeds
  • 1/2 tbsp melted coconut oil
  • 1/4 tsp ground ginger
  • 1 tsp cinnamon
  • 1 tbsp honey

Instructions

  • Slice the apple in half and spoon out the middle of each
  • In a small bowl, mix together all ingredients, excluding honey
  • Spray a baking pan or dish with coconut oil and place the apple halves skin down
  • Fill apple with mixture and drizzle honey over the top
  • Bake at 350 degrees F for 20-25 minutes
