Creamy Zucchini Stuffed Grilled Mushrooms

Ingredients

  • 9 larger crimini mushrooms
  • 3 tbsp red onion chopped
  • 1/2 Anaheim pepper finely chopped
  • 1/2 tbsp olive oil
  • 1 tbsp minced garlic
  • 2 tbsp cilantro finally chopped
  • 1 medium green zucchini spiralized
  • 3/4 medium yellow zucchini spiralized
  • 2 tbsp goat cheese
  • Sea salt & pepper to taste

Instructions

  • Spoon out center of mushrooms and add to olive oiled baking sheet to bake at 350 for 8 minutes to remove most of the moisture
  • Next, sauté red onion, Anaheim pepper, & garlic in olive oil for about 5 minutes
  • Chop the spiralized zucchini into large chunks & add to mixing bowl with rest of ingredients
  • Add in sautéed mixture (the goat cheese will melt as you toss)
  • Stuff mixture into each mushroom
  • Place on oiled veggie grill pan and grill for about 10-15 minutes
