Lemon Dill Scallops Over Zoodle Pasta

Ingredients

minced garlic

Chosen Blend oil

sliced mushrooms

low sodium chicken broth

scallops

lemon
squeezed

olive oil

medium spiralized zucchini

organic frozen peas
Instructions
In a skillet, sauté 1/2 tbsp minced garlic, 1/2 tbsp Chosen Blend oil (or avocado/olive oil) and 4 sliced mushrooms for 5 minutes
Add low sodium chicken broth for extra moisture when the oil has been absorbed
Add scallops with squeezed lemon juice and dill & heat both about 3-4 minutes each side
In a separate small pan, add 1/4 tsp olive oil, 1 medium spiralized zucchini and 1/3 cup organic frozen peas
Toss for 2-3 minutes and serve with scallops
