Lemon Dill Scallops Over Zoodle Pasta

Ingredients

  • 1/2 tbsp minced garlic
  • 1/2 tbsp Chosen Blend oil
  • 4 sliced mushrooms
  • 1-2 tbsp low sodium chicken broth
  • 4 scallops
  • 1/2 lemon squeezed
  • 1/4 tsp olive oil
  • 1 medium spiralized zucchini
  • 1/3 cup organic frozen peas

Instructions

  • In a skillet, sauté 1/2 tbsp minced garlic, 1/2 tbsp Chosen Blend oil (or avocado/olive oil) and 4 sliced mushrooms for 5 minutes
  • Add low sodium chicken broth for extra moisture when the oil has been absorbed
  • Add scallops with squeezed lemon juice and dill & heat both about 3-4 minutes each side
  • In a separate small pan, add 1/4 tsp olive oil, 1 medium spiralized zucchini and 1/3 cup organic frozen peas
  • Toss for 2-3 minutes and serve with scallops
