Mini Salted Almond Butter Cups

These little bites are way too addicting and way too easy to make!

Ingredients

  • 1 Alter Eco Blackout chocolate bar
  • 1/2 Alter Eco Cacao chocolate bar
  • 2 tbsp coconut oil
  • 1 tbsp maple syrup
  • 3 tbsp coconut flour
  • 1/4 cup toasted almond butter
  • 1/2 tbsp chia seeds
  • Pinch of sea salt

Instructions

  • Melt chocolate bars and stir in 1 tbsp coconut oil
  • Fill the bottoms of the mini pb cup mold just barely with the melted chocolate
  • Freeze for 10 minutes
  • For the filling, stir together almond butter, coconut flour, coconut oil, chia seeds and maple syrup
  • Form into tiny balls and place on top of the frozen chocolate in each cup (make balls small enough to see the base of the chocolate around the outside of the filling)
  • Next, pour melted chocolate over the top until it reaches the top of the molds
  • Place in freezer for several minutes then remove to sprinkle with sea salt
  • Place back in freezer for 5-10 minutes
