Chicken Sausage Pasta with Roasted Turmeric Cauliflower

Ingredients

  • Cilantro Avocado Sauce1/2 large ripened avocado1 tbsp Apple cider vinegar1 cup packed cilantro2 tsp minced garlic1/4 cup olive oil2 small limes juiced1/4 tsp sea salt1/4 tsp pepper1/2 tsp smoked chipotle seasoning1/2 tbsp minced garlic
  • Pasta6 mushrooms sliced1 medium zucchini, chopped1 tbsp olive oil2 spicy Italian chicken sausages8 oz Banza chickpea rotini noodles
  • Roasted Cauliflower2 cups cauliflower florets1 tsp turmeric spice1/4 tsp garlic powder

Instructions

  • Chipotle Cilantro Avocado Sauce: Combine avocado, apple cider vinegar, cilantro, 2 tsp minced garlic, olive oil, lime juice, salt & pepper, smoked chipotle seasoning in a food processor and pulse
  • Pasta: Sauté minced garlic, mushroom, and zucchini in olive oil for 5-7 minutes. Add spicy Italian chicken sausage to brown. Toss with chipotle avocado sauce and cooked Eat Banza chickpea noodles
  • Turmeric roasted cauliflower: Toss florets with olive oil, turmeric spice, garlic powder. Broil in oven for 15 minutes on middle rack, flipping towards the end
