Lemon & Herb grain salad topped with Rosemary Honey Roasted Carrots

Ingredients
1cupwheat berries
1lemonjuiced
2sprigs fresh thymefinely chopped
2sprigs rosemaryfinely chopped
2tbspchivesfinely chopped
Sea salt to taste
Ground pepper to taste
6long tri-colored carrots
1tbspolive oil
1tbsplocal honey
Instructions
Cook wheat berries according to package (takes about one hour). Once done, add 1/2 squeezed lemon, 1/2 thyme, 1/2 rosemary, and chives. Stir and season with sea salt and pepper.
While wheat berries are cooking, roast the carrots. Lay on baking sheet and toss with olive oil, remaining spices, lemon and honey to bake at 400℉ for 25 minutes
