Lemon & Herb grain salad topped with Rosemary Honey Roasted Carrots

Ingredients

  • 1 cup wheat berries
  • 1 lemon juiced
  • 2 sprigs fresh thyme finely chopped
  • 2 sprigs rosemary finely chopped
  • 2 tbsp chives finely chopped
  • Sea salt to taste
  • Ground pepper to taste
  • 6 long tri-colored carrots
  • 1 tbsp olive oil
  • 1 tbsp local honey

Instructions

  • Cook wheat berries according to package (takes about one hour). Once done, add 1/2 squeezed lemon, 1/2 thyme, 1/2 rosemary, and chives. Stir and season with sea salt and pepper.
  • While wheat berries are cooking, roast the carrots. Lay on baking sheet and toss with olive oil, remaining spices, lemon and honey to bake at 400℉ for 25 minutes
