Maple Spice Energy Bites

Ingredients

  • 1 1/4 cup granola (I like Paleo Passion Foods Maple Cinnamon grainless granola)
  • 1/4 cup cashews
  • 1/4 cup almonds
  • 1/3 cup shredded coconut
  • 2 tbsp cacao nibs
  • 2 scoops collagen peptides (or a scoop of protein powder)
  • 1/3 cup almond butter
  • 2 tbsp hemp seeds
  • 1 tbsp chia seeds
  • 3 tbsp unsweetened almond milk
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp pumpkin pie spice (optional)

Instructions

  • Combine almonds and cashews into food processor or blender and pulse for 30 seconds.
  • Add remaining ingredients and pulse until smooth. Form mixture into small, 1-inch balls.
  • Refrigerate for up to one week (for best taste), or store in freezer to last several weeks.
