Ingredients

  • 2 tablespoons extra virgin olive oil or avocado oil
  • 4 organic chicken sausages
  • 3 bell peppers any color or a mix of colors works!

  • Bone broth rice quick and easy cooking instructions included below
  • ¼ cup feta cheese
  • Flakey sea salt
  • Ground pepper
  • Red chili flakes
  • Extra virgin olive oil

Instructions

  • Start by slicing the sausages and peppers.
  • Rinse rice, then add to a pot with bone broth in place of water for added protein and flavor. Let cook according to package instructions while you make the sausage and peppers skillet.
  • In a medium to large skillet, heat on medium to high heat. Once hot, add the extra virgin olive oil (or avocado oil), then add the sliced sausage to brown, about 3 to 4 minutes each side.
  • Add in peppers, toss, then cover with a lid, and let steam for 2 to 3 minutes to soften. Remove the lid, then stir occasionally for 5 to 7 minutes.
  • Plate and serve the sausage and peppers on top of the cooked bone broth rice with crumbled feta, flakey sea salt, ground pepper, drizzle of extra virgin olive oil, and red chili flakes, if using. Enjoy!
