1/2cupwalnuts(or sub whatever nuts and seeds you like)
2tbsphemp seeds
1clovegarlic
pink salt, to taste
ground pepper, to taste
Salad
5-6handfulsarugula
1/4red onion, thinly sliced
1cupcherry tomatoes, halved
3radish, cut into matchsticks
1smallcucumber, sliced
1/2cupsundried tomato, chopped
1avocado, sliced
1tbsphemp seeds
Instructions
Pulse together all pesto ingredients in a food processor.
Combine arugula with red onion, tomatoes, radish, cucumber and sundried tomatoes. Toss together with pesto and top with sliced avocado, hemp seeds and a pinch of sea salt.
