Gluten Free Pancakes (using Simple Mills box mix)

Ingredients

Pancakes

  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 3 scoops collagen peptides
  • 2 tbsp ground flaxseed
  • 3 tbsp unsweetened almond milk
  • 3 tbsp melted coconut oil
  • 1/2 box Simple Mills Pancake mix

Toppings

  • 2-3 tbsp Wedderspoon Manuka honey (my favorite!)
  • 1/2 cup fresh blueberries
  • 1/4 cup pecans

Instructions

  • Whisk dry ingredients together in large mixing bowl.
  • Add dry ingredients and mix until thoroughly combined.
  • Using a 1/4 cup measure, transfer batter to coconut oil sprayed pan and cook on medium-low heat for about 2-4 minutes each side.
  • Once done, top with blueberries, honey and pecans.
