Ground Chicken Burgers (GF and DF)

Ingredients

Chicken Burgers

  • 1 lb organic ground chicken (can sub for organic ground turkey)
  • 1/2 medium red bell pepper
  • 1/4 cup chopped cilantro
  • 1/3 cup chopped spinach
  • 2 tbsp ground flaxseed
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1/4 tsp garlic powder
  • 1/2 tsp red chili flakes
  • 1/2 tsp sea salt
  • 1/2 tsp pepper
  • 2 tbsp oil (I prefer avocado oil)

Burger Toppings

  • 1 head butter lettuce
  • 1 avocado, sliced
  • 1-2 tomatoes
  • 1/2 red onion, sliced

Sweet Potato Fries

  • 2 medium sweet potatoes
  • 1 tbsp oil (I prefer avocado or coconut oil)
  • 1/2 tbsp seasonings of choice (i.e. salt and pepper, chili powder, paprika)

Instructions

Chicken Burgers

  • Dice up red bell pepper and add to large mixing bowl with organic meat, cilantro, spinach, flaxseed and seasonings.
  • Use your hands and mix thoroughly, then form into 4-5 patties.
  • Heat skillet (or grill) on medium with avocado oil. Add patties once oil is hot, but not smoking. Cover, and let cook about 5-7 minutes on either side, or until cooked through.
  • Once done, build burgers with butter lettuce, tomato, avocado, red onion and condiments.

Sweet Potato Fries

  • Turn oven on broil, high heat (500 degrees F).
  • Slice sweet potatoes into wedges. Spray or toss with oil (use as little as possible-- wedges get crispier with less oil) and season.
  • Lay sweet potato wedges on parchment paper covered sheet pan and let broil for 12-15 minutes, flipping towards the end.
