Blueberry Banana Superfood Muffins

Ingredients

Muffins

  • 2 eggs
  • 1 cup water
  • 2 tbsp coconut oil
  • 1 ripe banana
  • 1 box Simple Mills Banana Muffin Mix
  • 1/4 cup ground flax
  • 1/4 cup Vital Proteins Collagen Peptides (optional)
  • 2 tsp maca powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 3/4 cup fresh organic blueberries

Topping

  • 2 tbsp Manuka honey (my favorite is Wedderspoon's Manuka honey)

Instructions

  • Mash banana in large bowl, add remaining wet ingredients, and whisk together.
  • Stir in dry ingredients.
  • Fold in 3/4 cups fresh organic blueberries. 
  • Spray muffin tin with coconut oil and pour batter in 3/4 of each cup.
  • Bake at 350 degrees F for 25-30 minutes.
  • Drizzle with Wedderspoon Manuka honey.
