Teriyaki Stir-Fry

Ingredients

  • 1 tbsp avocado oil
  • 1-2 tbsp toasted sesame oil
  • 1/2 cup diced red onion
  • 1/2 tbsp minced garlic
  • 2 organic chicken breasts, trimmed + tenderized
  • 1 long carrot, thinly sliced
  • 1 cup sliced mushrooms
  • 2 baby bok choy, ends trimmed
  • 1 medium bell pepper, thinly sliced
  • 1 small zucchini, halved, then thinly sliced
  • 3 tbsp coconut aminos
  • 2 tbsp Primal Kitchen Foods no soy teriyaki sauce
  • Pink salt + pepper, to taste
  • 1 tbsp sesame seeds
  • 2 stocks green onion, chopped

Instructions

  1. Chop all veggies and set aside. Trim & tenderize chicken, then dice into small cubes.

  2. Sauté minced garlic + onion in avocado oil and sesame oil for 4-5 minutes in a large skillet. Add chicken to brown, then add remaining ingredients. Cover and let cook for 7-10 minutes on medium-low heat.

  3. Top with addition sesame seeds & green onion. Pour over brown rice + greens. Enjoy! :)
