Ingredients

persian cucumbers, diced

cherry tomatoes, halved

diced bell peppers

white northern beans, drained & rinsed

lemon, juiced

finely chopped fresh parsley

sea salt

fresh oregano

extra virgin olive oil

red wine vinegar
Instructions
Mix all ingredients together, chill for 2-3 hours in the fridge, then serve! Store in an airtight container— it keeps for up to 3 days fresh.
