Trim organic chicken breasts and tenderize or slice thin lengthwise. Add to a pot with avocado oil and season with s + p. Sear on either side at medium heat until browned, 2-3 minutes.
Add in jar of your favorite salsa, toss together, then cover with lid and reduce heat to low to cook for about 10-12 minutes.
Remove chicken and shred with 2 forks on a separate plate (or use a KitchenAid mixer). Add the chicken back to the pot with salsa, toss & it’s done!
Tostada
Heat tortillas both sides in the oven on broil— watch closely so it doesn’t burn.
Top with refried beans (I used pinto beans and followed @shutthekaleup's recipe), add shredded chicken, and all the toppings! Pair with chips, salsa (ideally my mango pico) and avo!
