Peppermint Hot Chocolate Latte

Ingredients

Cashew milk

  • 2 cups raw cashews
  • 4 cups filtered water
  • 1/2 tsp vanilla bean or extract
  • 1/4 tsp pink salt

Peppermint Hot Chocolate

  • 1-2 cups cashew milk (or milk of your choice)
  • 1 tbsp cacao powder
  • 1/4 tsp or less peppermint extract
  • few shakes cinnamon
  • few shakes cloves
  • few shakes nutmeg
  • 1 serving collagen peptides (optional)
  • 1/2 tsp manuka honey or maple syrup

Instructions

Cashew Milk

  • Let cashews soak in water in large jar or bowl overnight (or 4+ hours) to soften.
  • In the morning, strain cashews, then add to vitamix with 6 cups fresh filtered water, vanilla and pink salt. Feel free to flavor however you'd like with ingredients such as dates or maple syrup to sweeten, cinnamon, warm spices, etc. Blend on high for 2-3 minutes, or until smooth and frothy. *no need to strain cashew milk
  • Pour cashew milk into large jars to keep in the refrigerator up to 4-5 days fresh.

Peppermint Hot Chocolate Latte

  • Add 1-2 cups of freshly made cashew milk, or any milk, to small pot over the stove to heat. Once hot, pour back in empty blender with remaining peppermint hot chocolate ingredients and blend for 1-2 minutes. Top with marshmallows and a sprinkle of cacao powder
