Sesame Crusted Salmon

Ingredients

Salmon

  • 2 wild Alaskan salmon fillets
  • 1 tbsp extra virgin olive oil or avocado oil
  • 2 tbsp coconut aminos (similar to soy sauce, but made from coconut sap. sans gluten/soy)
  • 1 tsp honey
  • 1 tbsp sesame oil
  • 1/4 tsp garlic
  • pink salt, to taste
  • ground pepper, to taste
  • 1 tbsp sesame seeds

Broccolini

  • 1 bunch broccolini
  • 1/2 tbsp ghee
  • 2 cups spinach/power greens
  • 1-2 tbsp extra virgin olive or avocado oil
  • pink salt, to taste
  • ground pepper, to taste

Instructions

Salmon

  • Preheat oven to 425 degrees F.
  • Rinse salmon, lay flat in deep dish or bowl, then add oil, coconut aminos, honey, sesame oil, garlic salt and pepper. Using tons, gently flip salmon several times in mixture, then let sit/marinate for 10 minutes.
  • Transfer salmon to parchment paper covered baking sheet, adding a few spoonfuls of the sauce over the top, following by the sesame seeds.
  • Bake for 8-14 minutes, depending on how thick your salmon is.

Broccolini

    Slice ends off broccolini, about 1/2-inch from bottom. Give a quick few chops lengthwise, then saute in a skillet with oil, ghee and seasonings for 5-7 minutes, tossing constantly. Add in spinach/power greens at the end.
