Mint Chocolate Coconut Smoothie (Low-Sugar)

Ingredients

  • 1 cup full fat organic coconut milk I used Trader Joe's canned coconut milk
  • 1 cup unsweetened almond milk
  • 1/3 cup steamed then frozen cauliflower easier on digestion
  • 3 ice cubes
  • 1/4 avocado
  • 1 tbsp ground flax
  • 1 tbsp  MCT oil optional
  • 1-2 tbsp cacao powder
  • 1-2 tbsp cacao nibs
  • Cinnamon
  • Sea salt
  • 1 serving collagen peptides or protein powder
  • 1/2 date
  • 1/4 tsp peppermint extract
  • 1 tsp maca

Instructions

  • Combine all ingredients in a high-powered blender and blend for 2-3 minutes.
  • Top with coconut shreds, cacao nibs and granola. Enjoy!
