Loaded Taco Soup

Ingredients

  • 1 can organic kidney beans drained & rinsed
  • 1 can organic pinto beans drained & rinsed
  • 1/2 cup fresh cilantro chopped
  • 4-5 cups low sodium chicken broth
  • 1/4 red onion diced
  • 1/2 lime squeezed
  • 1/3 cup chopped green onion
  • 2 tsp Priimal Palate Taco Seasoning
  • 1/4 tsp garlic powder
  • 1 Bilinski Sausage organic Cilantro Lime chicken sausage sautéed (optional)
  • 1/4 medium purple cabbage sliced
  • 1 medium zucchini spiralized
  • 1/2 avocado diced

Instructions

  • In a large pot, combine chicken broth, beans, cilantro, lime juice, and seasonings and cook for about 10 minutes on medium heat
  • Then add sautéed chicken sausage, green onion, red onion to heat 1 more minute
  • In serving bowls, divide and add purple cabbage and spiralized zucchini
  • Pour soup over the top (the sliced cabbage almost feels like crunchy tortilla chips added in at the end) and top with diced avocado
