Cauliflower Tabbouleh Salad via Balance With B

Ingredients

  • 1 cup diced red onion
  • 1 cup finely chopped spinach
  • 1 cup finely chopped parsley
  • 1 cup finely chopped heirloom/cherry tomatoes
  • 3 cup riced cauliflower I cheated and bought the refrigerated riced cauli from Trader Joe's-- less of a mess!
  • 2 lemons juiced
  • ¼ cup olive oil
  • Sea salt & pepper to taste
  • 2 tsp cumin

Instructions

  • Mix all ingredients together and let chill in the fridge 1 hour before serving
  • Throw inside a heated pita pocket filled with hummus and sauteed chicken sausage
