Blueberry Banana Superfood Muffins

Ingredients

Muffins

  • 2 eggs
  • 1 cup water
  • 2 tbsp coconut oil
  • 1 ripe banana
  • 1 box Simple Mills Banana Muffin Mix
  • 1/4 cup ground flax
  • 1/4 cup Vital Proteins Collagen Peptides (optional)
  • 2 tsp maca powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 3/4 cup fresh organic blueberries

Topping

  • 2 tbsp Manuka honey (my favorite is Wedderspoon's Manuka honey)

Instructions

  1. Mash banana in large bowl, add remaining wet ingredients, and whisk together.

  2. Stir in dry ingredients.

  3. Fold in 3/4 cups fresh organic blueberries. 

  4. Spray muffin tin with coconut oil and pour batter in 3/4 of each cup.

  5. Bake at 350 degrees F for 25-30 minutes.

  6. Drizzle with Wedderspoon Manuka honey.
