Paleo Peach Cobbler

Ingredients

Filling

  • 6 organic peaches
  • 2 tbsp coconut oil, melted
  • 1 tsp cinnamon
  • 2 tsp monkfruit sweetener or coconut sugar
  • 1 tsp arrowroot starch
  • 1 tsp vanilla extract

Crust

  • 3/4 cup pecans
  • 2 tbsp coconut oil, melted
  • 1/3 cup almond flour
  • 1/2 tsp cinnamon
  • 1-2 tbsp maple syrup or honey
  • 1/4 cup shredded coconut
  • 2 tbsp ground flax (nutritional boost)
  • 2 tbsp collagen peptides (nutritional boost)
  • pinch sea salt

Instructions

  • Preheat oven to 350 degrees F.
  • Wash and slice peaches. Add to large bowl along with remainder of filling ingredients. Stir gently and thoroughly.
  • Pour filling mixture into 9-10 inch skillet or 8x8 baking dish.
  • Prepare crust by pulsing pecans in food processor for 10-20 seconds. Add remaining ingredients and pulse again until desired consistency.
  • Pour crust over the top of filling mixture in skillet or dish.
  • Bake for 40 minutes until topping is golden brown and crispy. Enjoy!
