Honey Chipotle Salmon With Roasted Bok Choy

Ingredients

Honey Chipotle Salmon

  • 8 oz wild-caught salmon
  • 1 tbsp avocado or extra virgin olive oil (spray is preferred)
  • 1 tsp manuka honey (I love Wedderspoon)
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp italian seasoning
  • ground pepper
  • pink salt

Bok Choy

  • 3 bok choy
  • 1 tbsp avocado or extra virgin olive oil
  • ground pepper
  • pink salt

Instructions

Honey Chipotle Salmon

  • Turn oven on broil, high heat (500 degrees F).
  • Rinse salmon and lay on parchment paper covered baking sheet, skin side down. Spray with avocado or olive oil and add seasonings + honey evenly over fish. Spray once more with oil.

Bok Choy

  • Thinly slice end off bok choy, then again lengthwise in half. Spray with oil and season with pink salt + pepper, then lay inside facing up on the same baking sheet.
  • Broil salmon & bok choy on center rack for 8-12 minutes, checking closely! *may need to remove bok choy before salmon-- the edges crisp up quick!
