Chicken Bacon Ranch Salad

This Chicken Bacon Ranch Salad is high in protein and flavor, super easy to make and just an overall winner. Option to turn it into a wrap too, you can't go wrong!

Ingredients

  • 2 organic chicken breasts
  • 2-3 heads of romaine lettuce, chopped
  • 3 tablespoons hemp seeds
  • 1 tablespoon avocado oil
  • Sea salt
  • Ground pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup SideDish Classic Ranch dressing code RACHAEL15
  • 2 tablespoons fresh, chopped parsley
  • 3 slices cooked, pasture-raised bacon

Instructions

  • Drizzle chicken with avocado oil and season with salt, pepper and garlic powder.
  • Grill chicken for about 4-5 minutes each side at 500 degrees F. Remove and slice.
    *Note: instead of grilling the chicken, option to sear it in a skillet on the stove top, for about 6-8 minutes per side over medium-high heat. In that case, I’d recommend a cast iron skillet if you have, to give you more of that grilling effect.
  • Add chopped romaine to a bowl with hemp seeds, parsley and dressing, and toss to coat.
  • Lastly, add sliced, grilled chicken + cooked bacon, and sprinkle hemp seeds, salt + pepper, and drizzle more ranch to top. Enjoy!
