Ingredients

For the Salad:

  • 2 cups shredded organic rotisserie chicken
  • 2 cups organic arugula or mixed greens
  • 1 small organic cucumber, sliced
  • ½ cup cherry tomatoes, halved
  • ¼ cup red onion, thinly sliced
  • ¼ cup avocado, diced
  • ¼ cup crispy chickpeas see below for full ingredients + instructions

Crispy Chickpeas:

  • ½ cup canned organic chickpeas, drained and rinsed
  • ½ tablespoon avocado oil
  • ¼ teaspoon sea salt
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon garlic powder

Dressing:

  • ½ cup fresh herbs (basil, cilantro, parsley)
  • ¼ cup cold-pressed extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon organic tahini
  • 1 garlic clove
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

Instructions

  • Preheat the oven to 400°F.
  • Pat the chickpeas dry with a paper towel, removing any loose skins.
  • In a small bowl, toss the chickpeas with avocado oil, sea salt, smoked paprika, and garlic powder. Spread them on a lined baking sheet and roast for 15-20 minutes, shaking halfway through, until crispy. Let them cool before using.
  • In a high-speed blender, make the dressing by blending together the fresh herbs, olive oil, fresh lemon juice apple cider vinegar, tahini, garlic clove, sea salt, and pepper until smooth.
  • In a large mixing bowl, toss together the shredded chicken, arugula, cucumber, cherry tomatoes, red onion, avocado, and (cooled) crispy chickpeas. Drizzle with the green goddess dressing and toss to coat. Serve immediately. Enjoy!
