Ingredients

  • 1 crisp firm apple washed (I used Honeycrisp)
  • 6-10 large pitted dates depending on the size of your apple
  • 2 pieces parchment paper (for rolling out the dates)
  • 1 wooden stick or apple spear
  • ~1/2 cup dark chocolate chips (Enjoy Life Foods makes dairy-free options)
  • 1 teaspoon coconut oil

Instructions

  • Open/butterfly the pitted dates and arrange them side-by-side on a sheet of parchment, overlapping slightly, until they form a roughly square shape.
  • Place a second sheet of parchment on top. Using a rolling pin or the bottom of a sturdy glass, press and roll the dates into one thin, even layer.
  • Place the washed apple in the center of the date layer. Use the parchment to fold and wrap the dates tightly around the apple, smoothing out any creases and pressing the dates firmly against the apple so they stick.
  • Place the wrapped apple in the fridge or freezer for 30 minutes, or until the date layer is firm.
  • Remove the apple from the fridge/freezer and peel away the parchment. Use your hands to gently smooth the date layer around the apple until snug, then insert a wooden stick or apple spear through the center.
  • Melt the dark chocolate chips with the coconut oil until smooth and silky.
  • Drizzle or coat the apple with the melted chocolate. If using, immediately add chopped nuts, crushed pretzels, flaky sea salt, or other toppings. Place on parchment and chill for another 30–60 minutes, or until the chocolate is set.
  • Slice and enjoy!
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3–4 days. If making ahead, slice when ready to serve.
