Instructions
In a large bowl or zip-top bag, whisk together the lime juice, lime zest, honey, oil, garlic, cumin, paprika, chili powder, salt, and pepper. Add the chicken thighs and toss to coat well. Cover and marinate in the fridge for at least 30 minutes and up to 2 hours.
While the chicken marinates, make the mango salsa. In a medium bowl, combine the diced mango, red bell pepper, red onion, jalapeño, cilantro, lime juice, and a pinch of salt. Stir gently to combine. Taste and adjust lime or salt as needed.Set aside or refrigerate to let the flavors meld.
Make the cilantro-lime drizzle. In a small bowl or jar, whisk together the lime juice, lime zest, honey, garlic, salt, and a few grinds of black pepper until the honey is dissolved. Slowly drizzle in the olive oil while whisking constantly until the mixture looks slightly thickened and emulsified. Stir in the finely chopped cilantro. Taste and adjust lime, honey, and salt as needed.
Preheat an outdoor grill or grill pan to medium-high heat. Lightly oil the grates. Remove the chicken thighs from the marinade, letting excess drip off, and discard the remaining marinade.Grill the chicken thighs for about 5–8 minutes per side, depending on thickness, until nicely charred in spots and the internal temperature reaches 165°F. Transfer to a plate and let rest for 5 minutes, then slice across the grain into strips.
To Serve:
