Protein Brownie Bites (Easy No-Bake)

These easy, no-bake protein brownie bites are a rich, chocolatey, gluten-free, dairy-free, and refined sugar-free snack made with dates, cashews, cacao, and protein for a naturally sweet, high-protein treat.

Ingredients

  • 1 cup Medjool dates pitted
  • ½ cup cashews
  • ¼ cup cacao powder
  • 5 tablespoons collagen peptides (I like Equip or Vital Proteins)
  • 2 tablespoons almond butter (or any nut/seed butter)
  • 1 teaspoon vanilla extract or vanilla bean paste (I like Simply Organic)
  • Pinch sea salt
  • 1 tablespoon milk of choice

Instructions

  • Blend cashews in a food processor until finely ground.
  • Add dates, cacao, collagen, almond butter, vanilla, and salt. Process until mixture starts to come together.
  • Add milk as needed until dough sticks when pressed between your fingers.
  • Roll into 12-14 balls.
  • Optional: Roll (or lightly dust) each ball in extra cacao powder before chilling.
  • Chill in fridge for at least 30 minutes. Enjoy!

To Store:

  • Store brownie bites in an airtight container in the fridge for up to 1 week, or in the freezer for up to 3 months. If frozen, let thaw for about 10 minutes before enjoying for best texture.

Notes

Recipe Swaps & Substitutions:
  • Nut/seed butter: Swap almond butter for cashew, peanut, or sunflower seed butter (whatever you prefer!).
  • Chocolate chips: Stir into the batter before rolling into balls for extra chocolate flavor, or skip to keep bites simple.
  • Collagen peptides: Can be replaced with your favorite protein powder. Note: protein powder may make the mixture slightly drier and change the flavor—add a splash more milk as needed to form a sticky dough.
  • Cacao powder: Roll bites in extra cacao for added antioxidants, or simply sprinkle over the top.
